I've seen the option of forwarding the email to the Issues inbox, but what we need is a way to incorporate the email in Documents folder structure, since the email often is a part of the projects documentation. How can this be accomplished?

Thanks for your question. The easiest way for you to share them with the rest of your project team would be to send/forward them to the project's inbox in Issues. To find the email address for your project please go to the Issues tab and then the tab Inbox. At he top of the list you will find the email address. Any emails forwarded to the address will show up here, including attachments.
